This is a childhood favorite of mine. If you want to make it more diet friendly, you can use nonfat evaporated milk and/or substitute Splenda for the sugar.
INGREDIENTS
Canned pumpkin puree 1/2 tsp salt ¼ cup Granulated sugar 1Tbs Pumpkin pie spice 1 ½ cups evaporated milk 4 Eggs, beaten Whipped Cream for garnish
INSTRUCTIONS
Preheat oven to 350 degrees. Place 6 ramekins in a roasting pan.
Combine pumpkin, salt, sugar, spices and milk in sauce pan and cook over medium heat for 5 minutes, stirring constantly.
In large glass measuring cup, beat eggs. Slowly add hot mixture to eggs while whisking so eggs do not curdle. Once all of the hot mixture is combined, pour evenly into ramekins. Add hot water to roasting pan so it comes half way up sides of ramekins Place in oven and bake until custard is set, approximately 25 to 30 minutes. Cool then Chill. Garnish with whipped cream just before serving Serves 6

The Fountain Valley Community Foundation was organized exclusively for charitable purposes including soliciting, receiving, investing and making grants of funds, property and other resources, and to provide direct charitable services to aid, sponsor, promote, advance and assist worthy activities, programs and services in the City of Fountain Valley.
Experience working with nonprofit organizations is desirable. The Fountain Valley Community Foundation meets on the third Thursday of every month at 5:30 p.m. in the Senior Center Conference Room. There are five seats up for appointment.
